Sweet Potato Cinnamon Roll Cake is a dense moist sweet potato cake that tastes like a cinnamon roll and is incredibly delicious. The recipe calls for 2 cups of sweet potatoes, which once boiled, I gave them a spin in my food processor to make them smooth. I used 1 cup of chopped pecans in the topping for crunch, but for anyone with a nut allergy you can certainly omit. The cake baked for 35 minutes at 350. There is a scrumptious glaze that gets added once the cake cools. This is one moist, delicious cake you are going to love!
