i’m obsessed with this mocktail, which contains olive oil and citrus skin, both of which will make your skin glow (whereas alcohol actually stuns your stem cells, leading to dull skin). it’s super easy to make but wonderfully balanced and complex.
1 lemon, skin on (so buy organic and/or wash really well!), seeds removed (don’t stress on it, do as much as possible)
1 orange, preferably organic, skin on, seeds removed
3 sprigs fresh thyme, thick stems removed
2 tbsp olive oil
2 tbsp honey
pinch of fine grain sea salt
2 cups cold water
blend until smooth, then strain through a fine mesh strainer. shake with ice, then pour into cocktail glasses. garnish with a swirl of olive oil and citrus peel or dried citrus, if desired. makes 4-6 mocktails, served up. can be made up to 4 days ahead of time and stored in fridge.
