Pork Loin Stuffed with Spinach and Parmesan

Instructions

Step 1
Preheat oven to 375 degrees.
Step 2
In a saute pan over medium heat, add the oil, shallots and garlic. Saute for 1-2 minutes but do not brown. Add the spinach leaves and stir until wilted. Remove from heat. Stir in the cream cheese and Parmesan cheese until all ingredients are combined.
Step 3
With a sharpening steel or thin kitchen knife, cut into the center of the pork loin lengthwise.
Step 4
Place the spinach filling into a disposable plastic piping bag, then squeeze the filling into the center of the pork loin. Place the filled pork loin on a sheet pan and season with salt and pepper.
Step 5
Bake the stuffed pork loin at 375 degrees for 20-25 minutes, or until the center reaches 165 degrees. When the stuffed pork loin is done, remove it from the oven and allow to cool for 10 minutes. Slice into 1/2-inch-thick slices and serve.
