Mocha banana bread

DAY 8 of VEGANUARY | Mocha banana bread 🤎 If you love banana bread AND you love chocolate and coffee… STRAP IN. I intentionally gave this 5 minutes less in the oven than usual to retain some goo factor and ohhh boy am I glad I did. Absolutely divine, especially when slathered in PB ▫️ 3 large bananas, mashed ▫️ 60g coconut oil, melted ▫️ 60g maple syrup ▫️ 2 flax eggs* ▫️ 200g plain flour ▫️ 1 tsp baking soda ▫️ 1/4 tsp salt ▫️ 1 tsp cinnamon ▫️ 30g cocoa powder ▫️ 50ml milk to mix the cocoa powder in ▫️ 5g instant coffee ▫️ Vegan dark chocolate chunks, to top *Make the flax eggs by combining 2 tbsp milled flaxseed with 5 tbsp water. Set aside for at least 5 mins to thicken before using. Mix together the wet ingredients, then follow with the dry and mix well. Separate into two bowls, adding cocoa powder to one and coffee to another. Layer spoonful by spoonful into a lined loaf tin, then top with chocolate chips. Bake for 40-45 mins (for a less gooey loaf, bake for 45-50 mins) at fan 175 C. ENJOY! . . . . .

Instructions

Step 1
Make the flax eggs by combining 2 tbsp milled flaxseed with 5 tbsp water. Set aside for at least 5 mins to thicken before using.
