Ingredients
3 servings
15 ouncesboneless skinless chicken breasts
or thighs, cut into bite-sized pieces
1 tablespoonolive oil
½ teaspoonsalt
¼ teaspoonblack pepper
½ teaspoongarlic powder
¼ teaspoondried oregano
¼ teaspoonsmoked paprika
1 tablespoonlemon juice
1clove garlic
minced
1 headbroccoli
cut into florets
½ cupchicken broth
fresh parsley
chopped, for garnish, optional
Instructions
Step 1
Place the chicken pieces in the Instant Pot. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, oregano, and smoked paprika. Toss to coat.
Step 2
Add the lemon juice, minced garlic, and chicken broth to the Instant Pot.
Step 3
Close the lid of the Instant Pot and set the valve to "Sealing." Cook on high pressure for 10 minutes.
Step 4
When the cooking time is complete, let the pressure release naturally for 10 minutes, then release any remaining pressure manually.
Step 5
Add the broccoli florets to the Instant Pot and stir to combine.
Step 6
Close the lid again and seal the valve. Cook on high pressure for 1 minute.
Step 7
Let the pressure release naturally for 5 minutes, then release any remaining pressure manually.
Step 8
Fluff the rice with a fork and taste for seasoning. Adjust with additional salt and pepper if needed.
Step 9
Serve the chicken and broccoli with chopped parsley (optional).
