Instructions
Step 1
Heat olive oil in a large skillet over medium heat. Add sweet potato and onions, cook for 5 minutes until softened.

Add garlic, paprika (if using), and cayenne pepper (if using), cook for 1 minute until fragrant.

Push veggies to one side of the pan, add shrimp to the empty space. Cook shrimp for 2-3 minutes per side, until pink and cooked through.

Stir shrimp back into vegetables, season with salt and pepper to taste.

Meanwhile, toast pecans in a dry pan over medium heat until fragrant and lightly browned, about 2 minutes.

Serve hash immediately, topped with toasted pecans and fresh parsley.
