Step 1
In a large soup pot or Dutch oven, heat oil and saute the fennel until soft, about 5 minutes. Add garlic and carrots and saute another 5 minutes. Add tomotoes with juices and add curry, chili, ginger and stir. Add water and stir over medium heat, bring to a boil. Add lentils and simmer for 30 mintues.
