Sweet potato Spanish tortilla

Instructions

Step 1
Peel the sweet potato and cut into 5mm slices. Cook in a steamer or small pan of boiling water for 5-6 minutes until just tender. Drain and set aside
Step 2
In a bowl, lightly whisk the eggs and stir in the seasoning, thyme, paprika and spinach.
Step 3
Preheat the grill to medium.
Step 4
Heat the oil in an ovenproof frying pan and fry the onion, pepper and garlic over a medium heat for 5 minutes or until softened. Add the sweet potato and cook for a further minute.
Step 5
Pour in the egg and spinach m8xture and cook over a gentle heat for 4-5 minutes until the egg starts to set. Transfer to a hit grill and cook for 2-3 minutes or until the top of the tortilla is golden and the tortilla is cooked through.
Step 6
Slide the tortilla onto a plate, scatter.over the parsley and cut into wedges. Serve with a leafy salad.
