These strawberry, macadamia and chocolate chip cookies are an easy way to your Valentine's heart. They are vegan, gluten-free and refined sugar-free.

Instructions

Step 1
Preheat oven to 170°C and line a baking tray.
Step 2
Mix all cookie ingredients (except strawberries, macadamias and chocolate), starting with the dry and adding the wet, until thick.
Step 3
Fold through the strawberries, macadamias and chocolate.
Step 4
Spoon onto the baking tray and shape/flatten into circles with the back of a spoon. The mixture will make approximately 6 large cookies.
Step 5
Bake in the oven for 25 to 30 minutes, or until golden. Remove from the oven and allow to cool for 10 to 15 minutes to set.
Step 6
Serve, optionally garnish with coconut yoghurt and enjoy!
