Ingredients

2cross rib
or chuck roast, fat cap cut off

sweet potato
10yellow gold potatoes
small

10baby carrots

1yellow sweet onion
medium

2 cwater

olive oil

2 tspgarlic

salt

Thyme

oregano

1 ½ tspbeef paste

1 Tbspbutter
Instructions
Step 1
Cut baby carrots and gold potatoes in half lengthwise. Cut sweet potato into quarter inch discs and half each disk. Cut fat cap off roast. Season liberally both sides with kosher salt and fresh black pepper. Heat olive oil in dutch oven until fragrant. Sear each side of roast 5 minutes over medium high heat. Deglaze with 1 C hot water. Add beef paste to pot. Add vegetables around roast. Add remaining 1C water. Season with salt and pepper, thyme and oregano and pat butter. Add in garlic.
Step 2
Bring to simmer on stove top then transfer to 375 convection bake oven. Roast 45 minutes, turn roast over, bake another 45 minutes. Until internal temp is 200 or so. Let rest a few minutes before slicing and serving.
