Kimchi Rice Gratin (Doria)

Doria (Rice Gratin) is essentially a rice dish that is topped with a creamy sauce and baked. This version uses kimchi as the star ingredient and is super delicious!

Instructions
Step 1
Preheat your oven to 350°F.
Step 2
In a skillet, melt the butter over medium heat. Add the minced garlic and sauté until it becomes fragrant.
Step 3
Add the chopped kimchi to the skillet and cook for another 3-4 minutes, allowing the flavors to meld together.
Step 4
Add in the gochujang, soy sauce and your choice of sweetener.
Step 5
Cook together for 1-2 minutes.
Step 6
Gradually pour in the heavy cream. Cook until the sauce slightly thickens and coats the back of a spoon.
Step 7
Turn off the heat and add in the parmesan cheese. Mix until the cheese has completely melted. Season with salt and pepper to taste.
Step 8
In a greased baking dish, spread the cooked rice evenly on the bottom.
Step 9
Pour the kimchi mixture over the rice, spreading it out evenly.
Step 10
Sprinkle the shredded mozzarella cheese and parmesan cheese over the top of the mixture.
Step 11
Cover and bake in the preheated oven for 10 minutes. After 10 mins, uncover the dish and broil the doria until the cheese is bubbly and golden brown.
Step 12
Once done, remove from the oven and let it cool for a few minutes before serving.
