Step 1
Combine 1/2 cup sugar, the 2 tablespoons flour,
and the lemon peel. In a large bowl sprinkle
pears with lemon juice. Add sugar mixture to
pears; toss to coat fruit. Fill a pastry-lined 9-
inch pie plate with pear mixture. In another
bowl combine the 1/2 cup flour, 1/2 cup sugar
ginger, cinnamon, and mace, Cut in butter ill
coarse crumbs. Sprinkle
mixture resembles
crumb mixture over pear filling. Cover edge of
pie with foil. Bake in a 375° oven for 25 min-
utes. Remove foil; bake for 25 to 30 minutes
more or till pie is bubbly and crust is golden,
Cool on a wire rack before serving Serves 8.
