Instructions
Step 1
To make the syrup, stir all ingredients in a medium saucepan over medium heat until sugar has dissolved. Simmer for about 10 minutes or until thickened and syrupy. Cool. Strain.
Step 2
Preheat oven to 180°C. Lightly grease a 20cm x 30cm slice pan. Line base and two long sides with baking paper.
Step 3
To make cake, place all ingredients except butter into a large bowl. Beat with an electric mixer until thick and combined. Add butter. Beat until combined. Pour mixture into prepared pan.
Step 4
Bake for about 30 minutes or until a skewer inserted into centre comes out clean.
Step 5
Pierce hot cake all over with a skewer. Drizzle with the syrup.
