Instructions

Step 1
Preheat your oven to 160°C.
Step 2
In a medium bowl, sift together flour and cinnamon. Add rolled oats, coconut, caster sugar and brown sugar. Mix well to combine.
Step 3
Melt together butter, golden syrup and two tablespoons of water in a small saucepan over low-medium heat. Remove from the heat and stir in baking soda. Add the butter mixture to the flour mixture and stir until well combined.
Step 4
Roll tablespoons of the biscuit mixture into balls and place on the prepared tray about 5cm apart. Press down to flatten slightly and bake for 15-20 minutes or until golden brown.
Step 5
Set aside to cool for 5 minutes, before transferring to a wire rack to cool completely.
