Instructions
Step 1
Start by preparing the strawberries. Slice 2 cups of strawberries and dice 1/2 cup of strawberries. Set aside.
Step 2
Choose strawberries of the same height and cut them vertically in half. Arrange the strawberries in a tin, pointed end up, with the cut side against the acetate. Make sure the berries fit snugly next to each other.
Step 3
Place a layer of biscuits inside the tin, making sure they fit snugly.
Step 4
In a bowl, add room temperature mascarpone cheese and smooth it with a spatula.
Step 5
In another bowl, add cold double cream and icing sugar. Whisk until stiff peaks form.
Step 6
Combine the mascarpone cheese and whipped cream, being careful not to over whip the mixture.
Step 7
Spoon about two-thirds of the cream mixture into a piping bag. Pipe the cream between the strawberries to fill the gaps and over the biscuit base in the tin to cover it completely. Add more chopped strawberries on top.
Step 8
Pipe another layer of cream on top of the strawberries and smooth it out with a palette knife.
Step 9
Refrigerate the dessert for a couple of hours to set.
Step 10
Gently remove the dessert from the tin and set it on a plate. Finish by sprinkling strawberry powder and thinly sliced strawberries on top.
Step 11
Cut the dessert into squares and enjoy!
