Step 1
Combine everything but the Mexican cheese and lime in a casserole dish or disposable aluminum pan. Sprinkle Tajin over everything.
Step 2
Either bake at 250 or smoke at 250 on a smoker for 1 hour. After that stir ingredients together and go for another hour.
Step 3
After that hour, mix again and add Mexican cheese, the juice of a lime, and more Tajin. Give it like 5 minutes then the Mexican cheese to melt a little and then serve.
