Cream sugar and shortening. Heat water in a large glass measuring cup in the microwave for a minute. Mix molasses into water and stir till combined. Combine dry ingredients. Q
Add about 1/3 of flour mix and mix a few seconds. Then add in some of molasses/water. Continue to alternate till combined. Add raisins. Drop by cookie scoop or spoons and bake 12 minutes. If large scoops 14 minutes perhaps. I have a medium to large scoop that I scape the bottom flat on the bowl and 12 minutes is perfect. If I don’t scape bottom and it’s rounded it’s 14 minutes. Note time when determined. Note: do not pour hot water directly into shortening because it will melt it and change the texture of the cookies. Adding some flour first and then enough liquid to be able to mix it alternating makes the best consistency. Don’t add extra flour right away if it seems too wet as it firms up after a few minutes. Then add if needed. If you weigh your ingredients you should not have to adjust at all.
