1 ½ cupsplain whole-milk Greek yogurt
2 cupsmint leaves
divided
2 cupsparsley leaves
with tender stems, divided
2 Tbspextra-virgin olive oil
plus more for drizzling
2 Tbspfresh lemon juice

1 headpurple cabbage

3persian cucumbers
thinly sliced

Instructions
Step 1
Pulse garlic, cheese, yogurt, 1cup mint, 1 cup parsley, 2 tbsp oil and 1 tbsp lemon juice until smooth
Step 2
Cut cabbage into roughly 6 wedges, keeping core intact. Drizzle with oil and season with salt. Grill or broil until charred on sides and paring knife easily slips into centre. Cool 5 min

Toss cucumbers, remaining 1 cup mint 1 cup parsley 1 tbsp lemon juice together.
Step 4
Spread yogurt over plate, plate cabbage, top with salad and corn nuts
