Tomato Jam Negroni

Instructions

For the cocktail

Step 1
Add all ingredients into a cocktail mixing glass and stir with a lot of ice until chilled and properly diluted. Usually around 15 seconds or so. It's a good sign when the mixing glass is cold/frosty.
Step 2
Pour into a rocks glass over a large cube and garnish with a tomato leaf.

For the tomato jam

Step 3
Combine all the ingredients into a saucepan and bring to medium heat. Once slightly boiling, reduce heat to low, and let it reduce until very jammy. It should take about an hour. Just make sure to keep stirring so it doesn't stick to the bottom. It should yield about 150g of tomato jam.
Step 4
Once the tomato jam has cooled, put it in a jar and then pour the 250g of Campari into it. Give it a stir and a shake and put it in the fridge overnight.
Step 5
To strain, first I get all of the large chunks out just by straining it through a sieve. Then I strained it through some paper towels to get it really smooth. This took a long time but it's worth it to have a smooth cocktail. Just let it do its thing. Keep checking in with it while you do other things lol.
