Step 1
Create a bain Marie by adding water to a pot and placing a heatproof bowl on top. Allow the water to simmer on a low heat, NOT boil as we want to gently heat the ingredients. Ensure the bowl is not dipping into the water. Add your chocolate, butter and maple syrup and continue stirring until smooth. If you feel the mixture is getting too hot and may burn, turn off the heat.
Step 2
Once melted and smooth, set aside while you chop your ingredients: biscuits, sweets and marshmallows + any other add-ins of your choice.
Step 3
Add the add-ins to your chocolate and place in a square cake tin lined with parchment paper.
Step 4
Spread the mixture to form a neat layer and refrigerate for an hour.
Step 5
Melt 50g white chocolate in the microwave, stirring every 10 seconds and add 1/2 tsp matcha powder. Mix and add to a ziplock bag or piping bag. Snip the edge and drizzle over your rocky road.
Step 6
Top with sprinkles, freeze dried raspberries and extra marshmallows.
