Instructions
Step 1
Cut zucchini into 3 inch sticks.
Step 2
Set up a dredging station with 3 shallow bowls.
Step 3
In the first bowl add the flour, Italian seasoning, salt, pepper, garlic powder, and onion powder. Mix together.
Step 4
In the second bowl add the eggs and whisk.
Step 5
In the third bowl add the breadcrumbs and Parmesan cheese. Mix together.
Step 6
Dip each zucchini stick into the flour mixture, then the eggs, finish with the breadcrumbs. Be sure to press the breadcrumbs into the zucchini.
Step 7
Add to the air fryer basket in a single layer.
Step 8
Repeat with the remaining zucchini sticks. Do not crowd the basket. Spray the zucchini with oil.
Step 9
Air fry at 400°F for 10 minutes or until crispy on the outside and tender on the inside.
Step 10
Repeat with the remaining zucchini fries.
Step 11
Sprinkle with more parmesan cheese and serve with marinara sauce for dipping.
