I got this recipe some years ago from a roommate's hookup. It was her mom's recipe and everyone I make it for love it. I do recommend making this recipe by hand - I found that it doesn't bake as well when made in a mixer.

Instructions

Step 1
Preheat oven to 350. Spray loaf pan with flour spray.
Step 2
Smash bananas with a fork until smooth. Stir in melted butter. Mix in baking soda and salt.
Step 3
Stir in sugar, beaten egg, vanilla extract, and cinnamon. Mix in flour
Step 4
Pour batter in prepared loaf pan. Bake for 50-60 minutes or until toothpick comes out clean from center.
Step 5
Cool on stovetop
