Instructions
Step 1
Combine graham cracker crumbs, melted butter, and sugar. Press into a 9-inch springform pan. Set aside.

Make the apple filling:

Melt butter in a skillet over medium heat. Add apples, brown sugar, cinnamon, and nutmeg. Cook until softened, about 5-7 minutes. Cool.
Step 4
Make the cheesecake filling:

Beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time. Pour half of the mixture over the crust, layer with half of the apple filling, and repeat.
Step 6
Add the crisp topping:

Mix flour, oats, brown sugar, and cinnamon. Cut in butter until the mixture resembles coarse crumbs. Sprinkle over cheesecake.

Bake for 50-60 minutes until the center is set but slightly jiggly. Cool completely in the pan, then refrigerate for at least 4 hours.
