Instructions
Step 1
Singe catcus to remove the spines from the pear. Peel, put thru pureer.
Step 2
Measure juice and lemon juice into a 6 or 8 cup saucepan. Measure sugar and put in a separate bowl. Add 1 pkg pectin to fruit juice and mix thoroughly. Bring to a rapid boil over high heat. Constantly stirring to prevent burning. When full rolling boil, add sugar and mix well. Bring to a full boil, boil for 2 minutes. Remove from heat. Skim off foam.
Step 3
Fill hot jars and quickly cover with lids and screw bands tightly. Put in a hot water bath for 10 minutes.
To Prepare Juice
Step 4
Use a small torch, gas stove burner, or bar-b-q pit burner to singe off needles.
To Prepare Jars and Lids
Step 5
Boil jars for 10 minutes. Put lids and screw bands in hot water, let stand till needed.
