Chocolate Chip Chewy Cookie
POV: you have a late night cookie craving
My fiancé and I were CRAVING cookies the other night and I was so thankful that I had frozen cookie dough balls waiting and ready to go.. freezing cookie dough is a life hack that we all need to get on board with for when the craving hits
Ingredients
makes 12 cookies
150g / 1 ¼ cups plain flour
½ tsp baking soda
100g / ½ cup granulated sugar
160g / ¾ cup soft light brown sugar
½ tsp salt (+ flakey salt for end)
115g/ ½ cup melted unsalted butter
1 egg / flax egg
1 tsp vanilla extract
80g / 3 oz milk chocolate chopped / chunks
80g/ 3 oz dark chocolate chopped / chunks
Instructions
1. Whisk your sugars, salt and butter together. Then add your vanilla and egg. Combine until ribbons form, don’t over whisk.
2. Fold in your flour and baking soda with a spoon. Then add your chopped chocolate, leaving a small amount back to press into the top of your cookie dough balls once formed. Place this mixture in the fridge for 40 minutes- 1 hour.
3. Use an ice cream scoop to make cookie dough balls, then press chocolate on to the top (or you can wait until after freezing to do this like i did). Freeze on a tray/ plate until ready to bake. I recommend doing this for at least an hour even if you want to bake today! Once frozen, you can transfer the balls into a paper and pop back in the freezer for easy storing.
4. Pre-heat oven to 180C/ 360F. Place cookies on a tray lined with baking paper and bake for 8-10 minutes. Then take out the oven and leave to set for 20ish minutes. If you try to eat them straight from the oven, they are delicious but they will fall apart so be patient! Finish with some flakey salt. Then, enjoy
