ROAST PEACHES WITH AMARETTO

VARIATIONS Nectarines work just as well as peaches in this recipe. You could also try out different liqueurs, such as Crème de Framboise, which would add the flavour of raspberries.

45ml/3 tbsp Amaretto di Sarone
45ml/3 tbsp clear honey

Instructions

Step 1
1 Preheat the oven 190°C/375°F/Gas 5. Cut the peaches in half and prise out the stones (pits) with the point of the knife. COOK'S TIP You can cook these peaches over a barbecue. Place them on sheets of foil, drizzle over the liqueur, then scrunch the foil around them to seal into parcels. Cook for 15-20 minutes.
Step 2
2 Place the peaches cut side up in an ovenproof dish. In a small bowl, mix the amaretto liqueur with the honey and drizzle over the halved peaches, covering them evenly.
Step 3
Bake the peaches for 20-25 minutes. or until tender. Place two peach halves on each serving plate and drizzle with the pan juices. Serve immediately.
