This recipe is so easy to make and it’s definitely a delicious and fun way to eat sweet potatoes . I usually make this when I have leftover sweet potatoes as it’s so tasty .

Turn the sticky dough on to a floured surface then add more flour bit by bit until you have a manageable dough. Divide the dough into three then roll into long rolls and cut 1 inch pieces .

Bring a pot of salted boiling water to a boil then cook the gnocchi for a few minutes until it floats . Add butter olive oil garlic and sage to a pan and cook then add the gnocchi a little bit of the gnocchi water and the Parmesan and mix to combine then serve
