For the PIZZA SAUCE
Instructions
Step 1
In a bowl mix water with sugar and salt.
Step 2
Add flour and yeast and knead for a couple of minutes. Add olive oil, knead for another couple of minutes then transfer your dough on a clean surface and knead for 20 mins.
Step 3
Place your dough back into your bowl, cover with some plastic wrap or a clean towel and rest for 1 hour.
Step 4
Divide your dough into 5 parts, shape them into some dough balls, place them on a tray, cover with some plastic film and rest in a warm place for a 12 hours (overnight).
Step 5
For the pizza sauce, in a bowl, season your peeled tomatoes with salt, pepper, oregano and a drizzle of olive oil and break everything together with your hands or a fork.
Step 6
In the meantime preheat your over to the maximum temperature.
Step 7
Place each dough ball on a round pizza tray dusted with flour and flatten it with your hands to form a pizza.
Step 8
Add a couple of tablespoons of your pizza sauce, some mozzarella (previously diced and drained very well), a handful of grated cheese (Parmigiano or Grana Padano), a drizzle of olive oil and cook for about 5-8 mins or until crispy on the top. Buon appetito!
