Instructions
Step 1
1. Preheat your oven to 180°C (350°F).

2. In a large bowl, mix the melted butter, milk, applesauce, and eggs together.

3. Add the sugar and brown sugar, and mix well.
Step 4
4. Stir in the vanilla, spices (cinnamon, ginger, nutmeg), and salt.

5. Sift the flour and baking powder, then gently fold them into the mixture until smooth.

6. Add the grated carrots and mix until evenly combined. Don’t hesitate to add some milk if the mixture is too thick here.

7. Grease and flour a square or rectangular baking pan (or use a silicone pan), and pour in the batter.

8. Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
Step 9
9. While the cake cools, prepare the frosting: whisk the light Philadelphia cream cheese with the vanilla extract and milk until smooth.
Step 10
10. Once the cake is cool, spread the frosting on top. You can decorate with pecans or grated carrots if desired. Enjoy!
