Instructions
Step 1
Saute onion until tender; remove from heat. Add rice, spinach, pimiento, water chestnuts, half of bacon, and salt. Stir well.
Step 2
Combine soup and sour cream; stir half into spinach mixture.
Step 3
Spoon spinach mixture into lightly-greased 9x13 baking dish; arrange turkey slion top. Spoon remaining mixture over turkey and cover it well.
Step 4
Combine breadcrumbs and butter with crumbled bacon. Sprinkle over casserole.
Step 5
Bake uncovered at 350° for 30 minutes.
