Crispy smashed potatoes with an olive oil mayo

Instructions

Step 1
Bring a large pot of water to a boil, Add the potatoes and cook for 20 to 25 minutes, or until soft. Drain and allow to cool for 5 minutes.
Step 2
Preheat oven to 220°C and line two baking trays.
Step 3
Line the potatoes on the baking tray and use the bottom of a cup or potato masher to squish them, keeping them in one piece.
Step 4
Drizzle over the olive oil and season with nutritional yeast, salt and pepper.
Step 5
Bake the potatoes for 30 minutes, or until golden and crispy. Remove from the oven and optionally season with extra salt and fresh chives.
Step 6
Meanwhile, place all ingredients for the olive oil mayo into a food processor and process until smooth. Transfer to a serving bowl and serve with the potatoes.
