Instructions

Cookie dough

Step 1
Mix the butter with the sugar for approx. 3-5 mins until creamy.
Step 2
Add the eggs and mix again for approx. 2-5 mins until creamy.
Step 3
Sift in the flour and baking powder and stir in.
Step 4
Finally, chop the white chocolate into small pieces and add to the batter together with the chocolate drops and stir in.
Step 5
Wrap the dough in cling film and press flat. Place in the freezer for approx. 30-45 mins.

Oreo cream

Step 6
Crush the Oreos with a rolling pin.
Step 7
Whip the cream with the cream stiffener until stiff. Then remove from the bowl.
Step 8
Mix the mascarpone with the powdered sugar until creamy.
Step 9
Then fold in the cream and Oreos. Be careful not to mix the cream for too long, otherwise it may curdle.
Step 10
Refrigerate the cream in the meantime.

Cookie sandwich

Step 11
Preheat the oven to 200 degrees convection.
Step 12
Remove the dough from the cling film and shape it into a ball on a floured work surface.
Step 13
Cut the ball in half down the middle and shape the 2 halves into a ball again. Then flatten to a diameter of approx. 10 cm. The two cookies should be about the same size. They will melt when baked.
Step 14
Place the cookies on a baking tray lined with baking paper and bake for approx. 15-20 minutes. The edges should not get too dark.
Step 15
Leave the cookies to cool completely, otherwise they will break.
Step 16
Using 2 plates, turn a cookie so that the smooth side is facing upwards.
Step 17
Spread this cookie with the cream.
Step 18
Finally, top with the other cookie.
