Instructions
Step 1
Preheat the oven to 180°C.
Step 2
Boil some salted water and cook your macaroni in it till al dente.
Step 3
Heat some sunflower oil on a pan over a medium high heat.
Step 4
Mix plain flour and cold water in a bowl and whisk then add this to the hot oil and keep whisking.
Step 5
Stir in the double cream and some chicken stock if you have any.
Step 6
Add some milk (quite a bit) it should still be quite light (like pancake mixture).
Step 7
Add nutmeg, all purpose seasoning, white pepper, ginger, garlic and 2 stock cubes, a bit of unsalted butter and some cheese to help thicken the sauce - taste.
Step 8
Decrease the heat and leave it to simmer.
Step 9
Mix the sauce into the cooked macaroni then transfer into a baking tray and cover with the rest of the mozzarella.
Step 10
Cook in the oven for about 20-25 minutes (until the top is nicely browned) then allow it to sit for about 5-10 minutes before serving.
