1. Steep your marshmallow root in 1 cup of boiling water overnight

2. The next day, strain it and set aside (make sure you have 1 cup!)

3. (Note: this recipe also works with regular water if you don't have marshmallow root)

4. Pour ½ cup of marshmallow root water into a bowl.
Step 5
5. Add the gelatin and whisk slightly.
Step 6
6. Set aside to bloom.
Step 7
7. Pour the other ½ cup of marshmallow root water and maple syrup into a small saucepan and whisk to combine.

8. Slowly bring the mixture to a boil while stirring. Keep boiling and stirring for 8 minutes.

9. While it's boiling, dust very well your baking tray with cornstarch or powder sugar or line it with parchment paper instead.

10. Turn on the mixer with the water/ gelatin mixture to medium speed and whisk while slowly pouring the maple syrup/water mixture into the mixing bowl.

11. Then turn the mixer to high and whisk for another 10-15 minutes or until it forms soft peaks like the consistency of marshmallow fluff. Add in vanilla extract or other flavors of your choice.

12. Quickly pour it in your tray (it will solidify VERY quickly)

13. Dust with cornstarch or powdered sugar (optional)

14. Let cool for 5-6 hours in the fridge.
Step 15
15. Cut into squares and enjoy !
