Aunt Sue's Apple Cake

Super-moist, and not too sweet! A family favorite. This is also a great recipe to use up older apples.

Instructions

Step 1
Preheat oven to 350°. Grease a 9x13 glass pan.
Step 2
Mix all dry ingredients together in a mixing bowl, until well-blended.
Step 3
Add oil..... To make it healthier, put applesauce in the bottom of the measuring cup first, up to half of the recipe amount. Pour oil on top, measuring to the 3/4 cup line. Add to the mixing bowl; blend.
Step 4
Add eggs and vanilla; blend.
Step 5
Wash about 4 apples. Quarter them, and remove the cores. Grate into the measuring cup used earlier. When the measuring cup is full (likely 2 apples, and halfway through grating), pause to dump the grated apple into the mixing bowl and blend well. This will prevent the apples from browning too much while finishing the grating step.
Step 6
Pour into prepared baking pan. Bake 50-60 minutes, until toothpick inserted into center comes out clean.
