Instructions

Cure Salmon (Optional)

Step 1
Make a mixture with 2 parts salt, 1 part sugar by weight and generously cover the salmon on all sides. Place in the fridge for 30 minutes.
Step 2
Rinse the salmon in ice water and pat dry.

Nam Jim Seafood

Separate and chop cilantro leaves and stems.
Step 4
Pound the stems with garlic, chillies, and palm sugar until a paste forms.
Step 5
Add the fish sauce, lime juice, cilantro leaves, and season to taste with salt and sugar.

Assembly

Step 6
Cut the salmon into slices and layer in a bowl.
Step 7
Top with mint leaves, garlic, and lime.
Step 8
Spoon over the sauce and serve.
