For the jerk rub (portions here make 1 cup)
3.5 TablespoonsChipotle pepper canned
4 tablespoonsWater
cold tap
1.77 gramsBasil
dried
1 TbspRosemary
dried
1 Tbspkosher salt
1 TbspBlack pepper
ground
1.77 gramsThyme
dried
2 tablespoonsLime juice
3 tablespoonsDry mustard
1 Tbsprice wine vinegar
For the sauce
Instructions
Step 1
Mix jerk rub ingredients
Step 2
Slice jalapeno, mince shallot, mince garlic
Step 3
Marinate chicken breast. Reserve 2 tbsp jerk rub,
Step 4
Blend pasta water or stock with reserved chipotle
Step 5
Saute shallot and garlic in oil or butter.
Step 6
Stir in cream, blended chipotle, and a tablespoon or reserved rub to taste
Step 7
Simmer a couple minutes to thicken
Step 8
Top with cotija and sliced jalapeno
