Instructions
Step 1
Pour 1¼ cups of water into a medium-sized saucepan.
Step 2
Sprinkle 3¼ tbsp of unflavoured gelatin evenly over the surface of the water. Let it sit for about 5 minutes to allow the gelatin to bloom

After the gelatin has bloomed, place the saucepan over low heat.

Stir gently until the gelatin is fully dissolved and the mixture is clear, which should take about 2-3 minutes.

Add 2½ cups of sugar to the gelatin mixture, stirring constantly.

Once the sugar has dissolved, increase the heat slightly and bring the mixture to a gentle simmer. Stir occasionally to prevent the sugar from burning. Add the lemon juice to avoid crystallisation.

Stir in ½ tsp of the corresponding fruit extract:

Stir well to ensure that the flavor and color are evenly mixed.

Lightly grease the ice cube mold with a small amount of oil (this will help with easier removal once set).

Pour each flavored mixture into separate sections of the ice cube mold, filling each cavity to the top.

Allow the jujube mixture to cool at room temperature for about 30 minutes. Then, place the mold in the refrigerator and let the jujubes set for 3-4 hours, or until firm.

Once the jujubes are fully set, carefully pop them out of the ice cube mold. If you used oil to grease the mold, they should come out easily.

Store the jujubes in an airtight container at room temperature or in the refrigerator, depending on your preference for firmness.
