Preheat your oven to 180°C. Grease a muffin tin with cooking oil/spray or line with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, salt and lemon zest (dry ingredients).

In a separate bowl, whisk together the egg, melted butter/oil, milk and lemon juice (wet ingredients).

Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to over mix.

Toss the blueberries in 1 tablespoon of flour to coat. This prevents them from sinking to the bottom.

Gently fold in the blueberries into the batter until evenly mixed.

Scoop the batter into the prepared muffin tin ensuring that it’s evenly filled among the muffin cups. Fill each about cup upto 2/3 full. You can use an ice cream scoop to do this.

Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean

Allow the muffins to cool for a few minutes in the tins, then transfer them to a wire rack to cool completely before serving with tea, coffee or as a snack.
