Cream of Mushroom Soup Recipe ⤵️
Ingredients
2 tbsp butter
1 tbsp oil
1 onion chopped
3 cloves garlic crushed
250 g fresh mushrooms sliced
2 tbsp flour
2 cups chicken stock or vegetable stock
1/2 cup milk
1/2 cup cream
Salt & pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
• In a pot fry some mushroom slices in butter. Remove and set aside
• In the same pot add some more butter and oil followed by the onions
• Sauté the onions till translucent then add in the garlic
• Add the sliced mushrooms. Mix well. Cover and cook for 3 - 5 minutes till the mushroom water evaporates
• Now add the flour and cook till fragrant
• Pour in the chicken stock and milk. Cook till thickened stirring continuously
• Puree the soup using a hand blender or blender jug (if using a jug, let the soup cool a little before processing)
• Add in the cream & seasonings. Cook till smooth and creamy
• Garnish the soup with cream and fried mushroom slices. Serve hot with garlic bread
