These creamy vegan veggie noodles check all the right boxes . They are loaded full of healthy veggies topped with a silky creamy vegan herby sauce and for texture toasted sunflower seeds . So tasty it’s definitely a must try !

For the sauce
Instructions
Step 1
Peel the carrots then spiralize them and the zucchini and add them to a large bowl

Step 2
Add olive oil to a pan on medium heat then bash a clove of garlic and lightly toast it until golden to flavor the oil . Once golden remove then add the red pepper flakes and toast another minute

Step 3
Add in the veggies into the hot pan and cook stirring for only two minutes then remove from the heat and season with salt and pepper

For the sauce
Step 4
Add all the ingredients for the sauce to a blender and blend until smooth


Step 5
Pour the sauce all over the noodles then toss to combine . Serve with the toasted sunflower seeds and more fresh herbs if you like and enjoy .
