Instructions
Step 1
Heat oil (do not allow to smoke). Add a couple grinds of cracked black pepper.
Step 2
Add chopped garlic and watch until it begins to go brown; it happens in 10-20 seconds. If adding additional dried herbs, add them now.
Step 3
Once browned, carefully add the wine slowly, as it will splatter. Reduce by 50%.
Step 4
Once reduced by 50%, then add tomatoes. *If whole, crush them in your hands as you add to the pot.* Taste for salt and add to taste.
Step 5
Bring to a simmer and cook until desired consistency is reached; should take 20-30 minutes.
Herbal Options
Step 6
After putting in garlic, you can add herb of choice. Add fennel seeds or dried oregano or basil.
Step 7
If using fresh basil, add it at the very end of cooking.
