Instructions

Step 1
Preheat your oven to 350°F (175°C). Grease and flour a round cake pan to avoid sticking.
Step 2
Separate the egg whites from the yolks. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form (you'll know they're ready when they hold their shape!).
Step 3
In another bowl, beat the egg yolks and sugar until pale and fluffy. Add the milk, oil, and vanilla extract. Mix until smooth.
Step 4
Sift the flour and baking powder into the egg yolk mixture. Gently fold until combined.
Step 5
Gradually fold the beaten egg whites into the batter. Be gentle to keep the mixture light and airy!
Step 6
Pour the batter into the prepared cake pan and smooth the top with a spatula for an even bake.
Step 7
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Step 8
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Step 9
Once the cake is completely cooled, dust the top with powdered sugar for a magical finish
