Instructions
Step 1
Place cashews and walnuts in a food processor and process to a fine powder.
Step 2
Add ground flax seeds, lemon juice, lemon zest, coconut and dates and process until consistency is thick and moist, adding a bit of water if needed.
Step 3
Using hands, roll into small bite size balls and then roll into some extra shredded coconut to coat the ball.
Step 4
Refrigerate or freeze until firm.
Step 5
