Instructions
Step 1
Start by mixing the 190g of flour, 30g of almond powder, 70g of powdered sugar, 1/2 tsp of ginger, 1/2 tsp of anise, 1/2 of nutmeg, 1 tsp of cinnamon, 1 egg, and 115g of soft butter.
Step 2
Don’t over mix <3 then cover and set in the fridge for at least 1 hour.

For the filling, start by putting 120ml of hot heavy cream over 150g of melted white chocolate, and mix.

Add the pumpkin spice, and mix.
Step 5
Then add the pumpkin puree, and mix again.
Step 6
Cover and set in the fridge while you prepare the cookies.
Step 7
Cut the dough into pumpkin-shaped cookie cutters.

Bake at 180°C for about 15 minutes.

Put your pumpkin cream in the freezer for 15 minutes before whipping it, and set aside <3

For the glaze, mix 250g of powdered sugar with the white of an egg, and the juice of half a lemon.
