Step 1
Place the egg in a pan of cool water on the stove at medium high. Allow it to heat until it reaches a rolling boil, then remove the pan from the heat and cover. You will let it stand until it reaches your preferred doneness. I like my yolk to be runny as the flavor melds really well with the other ingredients. It usually takes about 10 minutes.
Step 2
While your egg cooks; mash the avocado with some salt and pepper in a small dish.
Step 3
Thinly slice a tomato. I use whatever is cheap at the market.
Step 4
Toast your bead.
Step 5
Once your bread is ready, add the butter, then the cheese. Mash it down and little so it creates an even layer.
Step 6
Add the avocado and tomato.
Step 7
Peel your egg and place it on top.
Step 8
Enjoy!
