Freeze & Bake Rolls

Mom's original roll recipe, altered for Fresh-Milled Flour

Instructions

Step 1
Heat to scalding and set aside to cool

After milk mixture is cooled, combine yeast mixture and set aside (a couple TBSP of sugar)

Pour milk mixture and yeast mixture into bowl, then mill flour into the same bowl.

Fold flour and liquid by hand until no dry flour is left. Leave to rest at least 15 minutes.
Step 5
Add the eggs, and salt to bowl.

Mix with dough hook until dough forms a ball and passes the windowpane test.
Step 7
Let rise to double (30 minutes to an hour)
Step 8
Shape rolls (24 roll weighing 80-85g). Place in a tray or pan and place in freezer.
Step 9
When ready to bake, pull from freezer and preheat oven to 350°. Bake for 25 minutes until golden brown
Step 10
Brush tops with melted butter after removing from oven
