Instructions
Step 1
Heat oven to 350°F (180°C).
Step 2
Grease a baking sheet or line with parchment paper/baking mat.
Step 3
Wash the potato and pierce it with a fork a few times, wrap in a wet paper towel and place in the microwave for 5 minutes, remove from the microwave, wet the paper towel again and cook on the other side for another 4-5 minutes until it feels soft.
Step 4
Cut the potato open and scoop out the flesh into a bowl.
Step 5
While the potato cools, steam the peas in the microwave with 1 tablespoon of water for about 3 minutes, until tender, then mash with a fork.
Step 6
Add the mashed peas to the potatoes and mix together with your choice of seasonings.
Step 7
Using a medium cookie scoop (about 2 tablespoons), take a scoopful of dough and form into sticks, about 2 fingers wide and 1 finger long). Place on the prepared baking sheet.
Step 8
Bake for about 10 minutes until they set and start to brown. Allow to cool slightly before offering.
