Instructions
Step 1
Get ready and preheat:
Set the oven temperature to 175°C (350°F). Line two 9-inch round cake pans with parchment paper for easy removal, or grease and flour them.
Step 2
Combine Dry Ingredients:
Whisk the flour, baking powder, and salt in a medium-sized bowl. Put aside.
Step 3
Sugar and Cream Butter:
Using an electric mixer, combine the softened butter and granulated sugar in a large mixing basin and beat until light and fluffy, about 3–4 minutes.
Step 4
Add the vanilla and eggs:
Beat thoroughly after adding each egg one at a time. Add the vanilla extract and stir.
Step 5
Mix the Dry and Wet Ingredients:
Add the dry ingredients to the butter mixture gradually, switching between them and the milk. Start with the dry ingredients and finish with them. Stir just until incorporated.
Step 6
Add the strawberries and fold:
Using a spatula, gently fold in the finely chopped strawberries. Take care not to mix too much.
Step 7
Bake:
Evenly distribute the batter among the pans that have been prepared. A toothpick inserted in the centre should come out clean after 25 to 30 minutes of baking.
Step 8
Get the frosting ready:
Prepare the icing while the cakes are cooling. Creamy softened butter is achieved by beating it. Add the vanilla extract, strawberry puree, and powdered sugar gradually. Blend until smooth. If desired, add a drop of pink food colouring.
Step 9
Put the Cake Together:
On a serving plate, arrange one layer of cake. Cover with a coat of icing. Frost the cake's sides and top after adding the second layer. If desired, garnish with fresh strawberries.
