Step 1
Bring water to boil in med saucepan. Whisk in polenta, salt, and baking soda. Bring mixture to boil, stirring frequently. Reduce heat to lowest setting, cover, and cook 5 min. Whisk until smooth, cover, and continue cooking until grains are tender but slightly al dente, about 25 min. (Polenta should be loose and barely hold its shape when drizzled from whisk;it will thicken as it cools.)
Step 2
Remove from heat, whisk in butter and Parmesan, and season to taste.
